AETHER BREWING AT MILTON HAS CHANGED HANDS IN 2019 AND IS NOW MILTON COMMON.

Aether Brewing is Milton’s own craft brewery – an industrial chic beer headquarters where punters can sit alongside the giant copper vats and sip on one of the 9 house beers on tap and sup on delicious pub food.

The split-level space has a cork-tiled mezzanine level with schmick dining tables and chairs, a sunny courtyard on the street, a downstairs bar to enjoy nibbles and a drink and, out back, The Barrel Room, an ambient cavernous space where walls are lined with beer and whiskey barrels (this is the function room which can accommodate up to 100).

As well as the nine in-house beers, Aether Brewing has 3 guest beers & ciders on tap at any given time, as well as bottled beers, a cracking list of Australian wines and spirits (heavy on the bourbon and whiskeys). Look out for Aether Hop, Skip & Jump IPA, Viktor Imperial Red (pot only), Horizon Porter and Boos Bitter, while ciders hail from Tassie and include pagan Raspberry or Apple.

There’s also a cocktail menu featuring both classics and 5 signature beer cocktails such as the signature Aetherada – tequila, cilantro and pineapple juice with a lager top, rimmed with hop salt.

And while beer is a main attraction here at Aether Brewing, the food alone is worth a visit. Here you’ll find some of the best bar food around - think share plates such as slow smoked pork belly tostada with corinder salsa, panko crumbed smoked briw filled with mushrom or char grilled mackeral with citrus and watercress. There's also a great range of pizzas, burgers and hot sandwiches.

For something else to share, there's cheese or antipasto platters and, for those with a hearty appetite, the Aether BigSmoke Platter - pork belly, smoked wagyu brisket, pork sausage, smoked rosemary lamb, house slaw and pickles, bread rolls and crsipy fries.

There's also a great range of Italian pizzas, burgers (wagyu meatball or crispy chicken) and hot sandwiches (Reuben, Rosti or Italian Roast Pork Belly).

Need to know – Diners on the mezanine level can enjoy full table service. Out back past the waterfall is an amazing function space.
