Dr Gimlette is a splendid bespoke cocktail bar in the stunningly converted base of the heritage multi-level warehouse in Brisbane CBD that used to be home to Metro Arts.
The bar is owned by the talented folk behind some of Brisbane's best and most popular bars, including Finney Isles, Death & Taxes, Savile Row and Cobbler and its name is inspired by the famous Gimlet Cocktail.*
The gorgeous high-ceilinged space, which dates back to 1892, features original beams on the ceiling, polished timber floors, a stunning 9m marble bar and opulent Italian leather booths.
Cocktails are the headliners at Dr Gimlette, with 30 bespoke creations on offer, made from ethical and locally sourced ingredients. Choose from the signature gin-based Gimlet Variations; Highballs (including Spiced American Whisky or Mojito Variation); a refreshing Fruit Forward; Technically Driven (such as the Bloody Mary-driven Warhol Original); Stirred Down and Boozy or the Luxe (like the 19th Karat - Hennessy XO, coffee manzanilla, peppermint caramal & gold 60).
The impressive spirits list includes a massive selection of Gins (Australian, UK & world); and Whisky from all corners of the globe (Highlands, Lowlands, Speyside, Islay, Islands, Blended, Canadian, American, Japanese, Australian, Indian & Irish), as well as a unique curated range of rum, vodka, agave, brandy and cognac.
There's also a small boutique wine list of predominantly Australian wines, with a smattering from Italy, France and the USA, along with Perrier-Jouet and Dom Perignon champagne.
Good to know - Dr Gimlette will also offer Martini Trolleys, brought to your table and shaken or stirred with a side of theatrics.
Need to know - There is no food on offer - this is strictly a drinks-only venue.
*Rear-Admiral Sir Thomas Desmond Gimlette from the British Navy is supposedly behind the invention of the Dr Gimlet when, in the 1800's he suggested mixing lime with gin to keep scurvy at bay from his sailors.
