Sushi Room
Fortitude Valley
Sushi Room is a bespoke Japanese fine dining room located in the base of the Calile Hotel, just off James Street, Fortitude Valley.
Hosting up to 60 diners in an intimate mix of bar seating, cosy booths and tables, the restaurant occupies an exquisite minimalist architectural space designed by renowned architects Richards & Spence.
The striking decor features natural stone, timbers, papers, and traditional Japanese Kuriēto ceramics. A shallow dome hovers above the main dining room with its smoky monochromatic grey interior.
Taking centre stage is a 9.3 metre solid Japanese Hinoki timber counter floating in a pool of black limestone, where diners can watch the sushi chef bring a sense of theatre to the dining experience as he performs his magic.
Owned and operated by the STK Group ( Hellenika, SK Steak & Oyster and most recently Sunshine), Sushi Room offers a densely sophisticated menu based on seasonal quality and Australia’s world-leading seafood, whilst adhering to traditional Japanese sensibilities and form.
Japanese trained Head Chef Shimpei Raikuni has created a densely sophisticated menu based on seasonal quality and Australia’s world-leading seafood.
As the name suggests, sushi and sashimi are the predominant heroes of the menu with an extensive list of seafood choices and varieties from throughout the Pacific.
Other menu items include caviar Toro Toro sushi rolls, moriawase and lobster tempura, agemono traditional fried dishes, yakimono grilled dishes, along with caviar and oysters sourced daily. There is also a Omakase (chef’s recommendation) and Enkai (set) menu.
A thoughtfully tailored list of sake pairings, Japanese inspired cocktails, and whiskey along with an extensive international wine list is also available.
A wide range of Sake from throughout Japan has been carefully selected and grouped into taste preferences from light and fresh, textural and balanced to rich and complex for effortless navigation, while cocktails also feature traditional Japanese flavours of shiso, yuzu and wasabi.
Good to know - Secreted away on a mezzanine level is the private bar and dining, cosily seating eight diners – a world removed from the lower level.
Need to know - Sushi Room is accessed via the lobby of the Calile Hotel.
Sushi Room opens to the public on Tuesday June 14.
