Located on the ground floor of the hotel, Apron Restaurant & Bar offers diners a stunning aspect out to the resort-style pool terrace.

Led by renowned Executive Chef Justin Zammit, the sumptuous dining space encompasses a private dining room and intimate bar space with a distinctly international vibe.

A sleek, warmly-lit wine cabinet creates a natural point of distinction between the bar and restaurant. The intimate bar space is punctuated by a dark wooden bar, surrounded by a small group of lounge vignettes.

Bar guests are able to select from a carefully-curated wine list with pared small share plates, while Apron Restaurant offers diners a perfectly-balanced a la carte menu.

The focus here is on bespoke produce sourced from the ‘apron’ directly around the property, reflected in the name of the establishment.

In true embodiment of paddock to plate, Justin and his hand-picked team of chefs have individually sought out the finest in seasonal produce from inner city micro-farms and small suppliers extending to Moreton Bay and the Scenic Rim.

Having spent time in some of the leading Michelin-starred restaurants of the world, Executive Chef Zammit skilfully prepares a range of menu items within the hotel including cured meats, fresh artisan bread and harvesting honey.
