Attimi by Dario Manca
Paddington
Attimi by Dario Manca is one of Brisbane's finest Italian restaurants - a cosy and stylish 28-seat diner located on Paddington's Given Tce dining precinct, in the space formerly home to Montrachet and Nota.

The beautiful high-ceilinged space features exposed rustic brick walls, a ceiling to floor bar wall of wines and spirits, an intimate bar area to enjoy an apperitivo, polished timber floors and walls adorned with artworks by the owner/chef Dario Manca, who hails from previous stints at esteemed Brisbane restaurants Rosmarino and Za Za Ta.

Diners at Attimi can look forward to a Michelin-inspired dining experience, where everything is on point, from the exquisite food, which is artfully presented on bespoke crockery, to the attentive and professional service, mood lighting and ambience.

The food menu centres around two degustation style offerings, each taking diners on a culinary tour through the Italian regions -with a full twelve course or a shorter eight course option, while a concise a la carte menu is available on Tuesday to Thursday nights and Friday and Saturday lunchtimes.

Starters which are both part of the degustation and a la carte menus, include delectable Cecina round waffles with smoked labneh and the Ultimate Arancino, with carnaroli rice, porcini mushrooms, truffle mayo & lemon thyme.

Diners have a choice of the Attimi a la carte menu, which features dishes like Wagyu Bresaola (50gr stone axe Mbs 8/9, watermelon radish, oro white balsamic vinegar); Burrata Tonnata (32 opera burrata, tonnato foam, pickled red onion, basil oil, caperberries, celery leaves, croutons & red wine jus); and Coral Trout 150g (Cardamom and prosciutto di Parma sauce, grapefruit, chilli oil, fennel fronds, puffed fennel barley).

Vegetarians are spoilt for choice with a dedicated A La Carte menu featuring dishes such as Carasau and Stracciatella Dip (Sardinian flat bread, smoked stracciatella, green tomatoes & rosemary oil); Risotto al Salto (crispy saffron risotto, gorgonzola cream, house pickle & sorrel) and Mushroom Cotoletta (crumbed & fried lion mane mushroom, charred lettuce, shaved pecorino & white onion puree).

The Degustation menus, either the 8-course 'A Quick Trip Through Italy' or the 12-course 'Travel Italy With Us' take in regional dishes from throughout Italy, with standard or vegetarian options available for both, positioning Attimi as a top destination for fine vegetarian dining in Brisbane.

Degustation menus come with the option of matching wines, standard or premium. Also available are specially curated gluten free and dairy-free degustation menus, with no minimum number required, so single diners with dietary requirements can be catered for.

The impressive wine list (presented in a cork-covered menu), curated by Callum McCrorie highlights Italian varietals - both celebrated classics and hidden gems. The cocktail list stuns with playful creativity: from the best-selling Miele Messicano (tequila, burnt honeycomb) to the Attimi Negroni, a Nutella-clarified twist on the classic.
